Needed to eat something nutritional as a post workout food but still wanted it to be tasty. So I came up with this dish. Smashed a boiled potato and an egg then mixed it with Thousand Island sandwich spread. Added cucumbers and sprinkled some herbs. Turned out super tasty, such a great combination, especially for summer time.
