Mimosa Flower Syrup
This syrup has a delicate flavor and a unique floral scent.
Ingredients:
- 1 cup (about 250ml) water
- 1 cup (about 200g) granulated sugar
- 2 large handfuls of fresh mimosa flowers (Albizia julibrissin), cleaned and separated from the green stems
- Optional: 1 tablespoon lemon juice (to preserve the color and add a fresh note)
Method:
Harvesting and cleaning: Collect the mimosa flowers (the pink/yellow "pompoms") and separate the woody green parts, which would make the syrup bitter.
Preparing the syrup: In a small saucepan, bring the water and sugar to a boil, stirring until the sugar has completely dissolved.
Infusion: Remove from heat and add the mimosa flowers. Let infuse for at least 12-24 hours (or until cooled, refrigerated).
Straining: Strain the liquid through a fine-mesh sieve or cheesecloth, crushing the flowers well to extract all the flavor.
Storage: Bottle the syrup in a sterilized bottle. It will keep in the refrigerator for several weeks.
